1.) make sure the flaps/port covers are clean. the rubber seals can be compromised if there something stuck in them.
2.) make sure you close them properly. apply pressure to all parts of the port cover to make sure it does not pop back.
3.) to know if your device is water damaged. you can check a white indicator inside the port. if turns red it means water has gotten inside the device.
4.) as @quester has quoted, the device is not anymore for submerging (unlike previous z models) though they have same IP certification.
5.) make sure to dry your device completey before plugging in anything. there is an instruction paper in the retail box on how to this.
6.)sometimes if the device came in contact with water while warm/hot. moisture can develop inside the device (mostly in the camera lens) so make sure the device is cool enough before you wash it. the fog on camera lens will eventually go.
It should be waterproof with water ingress IP68 rating, provided that all ports and attached covers should be firmly closed. Sony suggests that you should not put the device completely underwater; or expose it to seawater, salt water, chlorinated water or liquids such as drinks. Abuse and improper use of device will invalidate warranty.

i just got my new Z5 and i am afraid to try it underwater, just wanted to clarify if i need to cover the charging and earphone sockets??

You don't need to cover USB port or audio jack in case you decide to expose it to water, but you need to make sure that USB port is completely dried before you plug it into a charger.
