In the Phone App, in the Recents List, when you touch the screen

The app start calling directly the person, without asking to confirm the action

Is there a way to prevent this one touch calling?

(At the Contacts list, you get another screen first, before calling)

Where in the phone app:

There are on the bottom 3 options

Favorites - Recents - Contacts

Use a third-party calling app. For example "True Phone".

@mremco I'd recommend using the contacts list as it has what you're asking for, there's no settings you can change to get this in the phone app.
